Sugarloaf is the unique occurrence at the bottom of the Montmorency Falls near Quebec City. It forms when the waterfall’s falling water evaporates first (even at the coldest temperatures) and almost immediately freezes, falling then to the ground as the white powder. Sugarloaf is a big attraction among the visitors of the falls as everyone tries to climb it. The day I took this shot, only a few of the most skilled climbers managed to get to the top because it was very steep and slippery.

Yield: serves 4


  1.     1 pound baby carrots
  2.     2 teaspoons olive oil
  3.     1 tablespoon chopped fresh thyme
  4.     1/2 teaspoon salt
  5.     1 teaspoon grated lemon rind
  6.     1/8 teaspoon black pepper
  7.     1 finely chopped green onion


Preheat oven to 450°.In a large bowl, combine carrots and next 3 ingredients (through salt); toss well.Spread carrots in a single layer on a baking sheet. Bake at 450° for 30 minutes or until tender and lightly browned, stirring every 10 minutes. Remove from oven. Transfer to a serving bowl. Sprinkle with lemon rind, pepper, and green onion; toss well. Serve immediately.

  1.     1/2 teaspoon salt
  2.     1 cup frozen shelled edamame, thawed
  3.     3/4 cup uncooked couscous
  4.     1 1/2 tablespoons minced fresh parsley
  5.     1/2 teaspoon grated lemon rind
  6.     1 tablespoon fresh lemon juice
  7.     1/8 teaspoon freshly ground black pepper


Bring 1 cup of water and salt to a boil in a medium saucepan. Add the edamame, and cook 30 seconds. Stir in the couscous and the remaining ingredients. Remove the mixture from the heat, cover it tightly with a lid or aluminum foil, and let it stand for 5 minutes. Fluff with a fork before serving.


  1.     3 pounds (3/4-inch) cubed peeled Yukon gold or red potatoes
  2.     8 cloves garlic, peeled
  3.     1 1/4 cups low-fat buttermilk
  4.     1 teaspoon salt
  5.     1/2 teaspoon black pepper


Place potatoes and garlic in a large saucepan; cover with water, and bring to a boil. Cook 15 minutes or until very tender; drain. Return potato mixture to pan; add remaining ingredients; mash with a potato masher.
